One of the fastest crops in the garden, this arugula is slower to bolt and more heat tolerant than most. Grow it in pots, beds or hydroponics for peppery baby leaves, full-size greens or microgreens.

Growing Guide

• Days to maturity: 40–45 days; baby leaves from about 25 days
• Sun: Full sun in cool climates; partial shade in hot summers
• Sow depth: 1/4 in.
• Spacing: Thin to 3–4 in. apart; rows 12 in.
• Germination: 5–7 days
• When to sow: Sow as early in spring as the soil can be worked, then every 2 weeks for a continuous crop.
